While it gently bubbles away, a glass of chilled 2024 Flint Rock Chardonnay from Howard Park sets the mood. It’s a fresh Great Southern wine with bright fruit and a clean, mineral edge that pairs beautifully with earthy truffle.
While waiting for the risotto to come together, there are simple flavours to enjoy. Dipping into the Hippo Lakes Dukkah with the truffle oil from The Margaret River Truffle Farm and a crunchy loaf of bread, breaking into the Blue Cheese & Manjimup Truffle Gourmet Crackers from Margaret River Cracker Co or snacking on the Marinated Spiced Garlic Pickles from A Bit on The Side (don’t worry, the pickling takes away the garlic-breath).
Once the risotto is ready, it becomes a true truffle experience when it’s finished with a drizzle of Truffle Oil and a sprinkle of Truffle Salt from The Margaret River Truffle Farm for that rich, unmistakable aroma.

Made in Chapman Hill in the South West, this dukkah is not just for dipping. We sprinkle it on hummus or roasted veggies but the trifecta of avocado + balsamic + dukkah is the real winner.
A Bit on The Side Marinated Garlic Pickles 250g
Whole cloves of garlic, the pickling removes the bitterness and mellows the flavour (we promise!). Delicious on a cheeseboard, antipasto plate or straight from the jar.

The Margaret River Truffle Farm
Ben and Charmaine run a small, family-owned truffle farm tucked into the native forests of the Margaret River region. Their farm is home to oak and hazelnut trees inoculated for black winter truffles, and in winter you can join one of their truffle hunts led by friendly dogs, dig up real truffles yourself and learn all about how these gourmet treasures grow. They’ve created delicious gourmet produce that showcase the truffles beautifully, their Truffle Balsamic is a standout. This is a down-to-earth, authentic farm experience that gives you a real taste of local truffle magic.
