This one begins with Desert Lime Gin from Black Cockatoo Distillery — bright, unmistakably West Australian and carrying a refreshing citrus tang from fruit picked straight from orchard. It’s classic in structure, but far more interesting in conversation.
And with it? Well, that's where things get interesting.
Dark chocolate with Confit Orange Peel from Bahen & Co because citrus deserves a companion with depth. Savoury Salted Nibbles from Morish Nuts because balance matters and, to give just enough heat to keep the evening from becoming predictable, we've added Black Lime & Chilli Peanuts from Australian Black Limes.
Dried Lime Slices from Passioné Secca add sophisticated flair and the stainless steel double jigger ensures the pour is precise — generous, but precise.
This is a gin best paired with a Mediterranean tonic, plenty of ice and a steady hand or turn it into a mojito with muddled lime and fresh mint.
It’s a G&T, certainly. Just not the sort that plays it safe.

Black Cockatoo Desert Lime Gin 700mL
A distinctly Australian gin using desert limes which has more of a sweet tang compared to normal limes and it's won but Australian and international awards. This is a citrus-forward, classic G&T which is even better with an extra little squeeze of lime. From Black Cockatoo Distillery in Bridgetown, a lovely cellar door to visit. Alcohol by Volume (ABV): 41%

Paul at WA Wood Designs is a true craftsman, creating beautiful serving and kitchen boards from salvaged WA timbers that would otherwise go to waste. Working from his home workshop, he shapes each piece by hand, letting the natural character of the wood guide the design. His wife Jackie gives every board its final touch, applying multiple layers of food-grade oil that bring out the grain and give a high-end finish. You’ll often find Paul & Jackie at the Busselton & Dunsborough weekend markets and others around the wider South West, sharing their work with locals and tourists who want to take home a stunning piece of our region’s timbers.
